Coconut Sorbet Recipe
- 2 14.5 ounce cans coconut milk.
- 1/2 cup honey.
- 1 teaspoon vanilla bean extract.
- Dash of salt.
- 1/2 cup sweetened shredded coconut flakes, lightly packed.
- In a large pot, whisk coconut milk, honey and salt over medium heat until melted. Remove from heat, add vanilla extract. Chill in large mixing bowl for 1 hour. Chop coconut flakes into small pieces and whisk into mixture. Freeze in ice cream maker. Transfer to air tight container and freeze for 2-3 hours before serving.
